Beetroot risotto Rawkure

Recipe: Rawkure’s Beet Risotto

Rawkure may conjure up images of anti-inflammatory sweet treats like Sinless Cacao Donuts and superfood Kreamy Kupcakes. But there is a savory line too, including this recipe for Beetroot Risotto that Rawkure’s founder Mariam Hourani shares with readers.


  • 1/2 cup chopped sweet onion

  • 1 teaspoon grapeseed oil

  • 4 small beets, chopped and made into puree

  • 1 cup white arborio rice

  • 3 -4 cups homemade vegetable stock

  • 1 tablespoon minced garlic

  • 1/2 tsp cinnamon

  • 1/4 tsp black pepper

  • ¼ tsp Himalayan salt

  • 2 tablespoons vegan shredded cheese


  1. Heat a cast iron skillet over medium high heat. Add grapeseed oil, allowing it to warm, then add in the chopped onio. When they are browning, add the beetroot puree.

  2. Add the rice and let it absorb the beetroot juice for about 4 minutes. After stirring add the garlic, cinnamon, mint, salt and pepper and stir some more.

  3. Add 1/2 cup of the vegetable stock to the skillet and allow the rice to cook until it starts bubbling. Then add some more stock and stir. Repeat this until all stock has been added, stirring at all times.

  4. Add the vegan shredded cheese and stir until the rice is soft and creamy.
